Fast Recipes

Okay, I’m not into cooking but since we just started the Daniel Fast and I love to make healthy dishes (sometimes), I decided to start taking notes and pictures of new recipes.

My mother made a delicious green pigeons soup today so I will share it here.

It looks good right?!

Ingredients:

1 can of green pigeons (gandures in Spanish)

6 to 8 small carrots

3 medium size potatoes

1 yellow plantain (almost brownish)

a little bit of olive oil

seasoning (adobo in Spanish)

2 tbsp of tomato sauce

Peel and cut everything. Put all the ingredients in a casserole with enough water to cover them. Let them cook until the potatoes and the plantains are tender. While cooking add the seasoning according to your taste. Then enjoy hot! 🙂

Sofrito is a great Spanish seasoning for meals. You can use it for soup, sauces or stew.

Sofrito ingredients:

Lots of cilantro (yes, the more the better)

1 big onion

4 to 5 garlic heads

2 medium tomatoes

1/2 cup of water

2 tbsp of olive oil

salt and pepper (optional for taste)

Wash everything with hot water. Yes! to get rid of all the bacteria from the ground. Cut the onion, the tomatoes and garlic in small pieces. Put all the ingredients in a blender and let it work its magic. The end result should look like this>>photo(281)

Fruits smoothie to start the day 🙂

Ingredients:

Lots of blueberries

Half of a medium size cucumber

1 Banana

1/2 Cup of water

2 tbsp of grape juice

2 -3 Ice cubes

Put all the ingredients in the blender and let it work until everything is smooth. Taste & Enjoy!

Fresh salad with nuts

Ingredients:

Romain lettuce

Spinach

Cucumbers

Corn

Carrots

Olive oil

Vinegar

Almonds, sunflower seeds or any other nut – The nuts substitute croutons
